With fall just around the corner, we could all use a little more heat. At Toujours Mikes we have decided to take matters into our own hands; we've concocted a brand new spicy menu with Frank's RedHot sauce that will warm up your taste buds and spice up your routine during this period of seasonal blues. Muy Caliente!

Feeling hot hot hot !

Did you know that just like the Richter scale that measures the strength of earthquakes, there is the Scoville scale that measures the spiciness of chili peppers? Yes, indeed, a scale that can tell us how much heat our taste buds will endure. 

To create this scale in 1912, the American Wilbur Scoville prepared a solution of fresh whole chillies pureed and mixed with sugar water. This solution was then tested by five people and as long as the burning sensation of the pepper remained, he increased the dilution of the solution. Once the burning sensation disappeared, the value of the dilution was used as a measure of the spiciness of the pepper. 

For example, a mild chili pepper that had a Scoville heat unit of 0 meant that no burning sensation was detectable even without dilution. In contrast, a pepper with a Scoville heat unit of 300,000 had to be diluted 300,000 times before the burning sensation became undetectable.

Does the "Carolina Reaper" sound familiar? If so, I hope it's not because you've tasted it because it's the hottest pepper in the world with a degree of 1,641,183 on the Scoville scale. Aye aye aye!

Don't worry, we didn't use the "Carolina Reaper" in our new spicy dishes, but Frank's RedHot sauce, which only ranks 450 on the Scoville scale... to give you an idea, Tabasco has a 700 score. Just enough to warm up your taste buds a bit;

Spicy Chorizo Pennine: A great pasta dish filled with flavor and heat; Neapolitan sauce, onions, chorizo, green and red peppers, green onions, Frank's RedHot spices and crispy onions.
