- 4 chicken cutlets or 2 boneless chicken breasts cut in half and flattened with a rolling pin
- ½ cup all-purpose flour
- 2 beaten eggs
- ½ cup of store-bought breadcrumbs
- 45 ml grated Parmesan cheese
- A generous drizzle of olive oil
- 1 cup tomato sauce
- 2 cups grated mozzarella cheese

Prepare the dish before the big feast
Let's start by preparing our cutlets or chicken breasts cut in half. Take 3 different bowls. Add the flour to the first one. In the second, add the eggs and, in the third, add the breadcrumbs and parmesan cheese.
Then take a first cutlet and flour it, shake it off a little before plunging it into the beaten egg mixture and finish by covering it with the breadcrumb and parmesan mixture. Repeat with the remaining cutlets.
Once this is done, heat the generous drizzle of oil in a frying pan and sear the cutlets on both sides until they are golden brown, then transfer them to a baking sheet covered with parchment paper.
At that moment, it's time to cover them with your favourite tomato sauce and grated mozzarella cheese. Then, all you have to do is to grill them for a few minutes in the oven until the cheese is well browned. That's it, that's all! Wonderful, isn't it?
