You come home hungry after a long, hard day's work. Slowly but surely, you put on more relaxed clothes and (finally) reach the fridge. With a rumbling belly, you open the door, and, after a big sigh, you ask yourself the same question as every day: what do I eat?
If you aren't too sure, don't be concerned, our chefs are once again rushing to your rescue. In the following article, we suggest 3 quick and easy chicken recipe ideas.
A chicken and veggie recipe to crunch into
Let's start with something we typically don't eat often enough: vegetables. The best source of vegetables is definitely salad. And today, we want you to crunch into an À La Mikes Salad.
To prepare this dish, which is very popular with our gourmet clientele, start by cooking a tender chicken breast. Sear it well on both sides in a little oil and butter. When the cooking is finished (and the chicken is golden brown), set it aside on a plate.
Next, take a mix of house lettuce (the kind you have on hand), shred and mix it all together with a little kale to add even more crunch and nutrients. Finish off with a fresh tomato, a little cucumber and a little red onion, then some breadcrumbs. Once everything is in place, layer the sliced chicken breast on top of the greens and vegetables and drizzle with your favourite vinaigrette. When dining out in our restaurants, our chefs suggest a sweet onion vinaigrette, but since all tastes are subjective, go with the one you like the most in the moment.
A quick and easy pasta dish featuring the great taste of chicken
Even if you don't have much in your fridge and pantry, chances are you have some short pasta, like pennine. If so, take out your utensils and prepare our Chicken and Broccoli Pennine.
Begin by cooking the pasta according to package instructions and set aside. Next, take a nice chicken breast out of the fridge and brown it as usual. Once ready, cut some broccoli into florets and tenderize them in a frying pan, in water or by steaming them.
Now that you've got your pasta, chicken and broccoli florets, all you have to do is mix them together before adding Alfredo sauce to the mixture. It's a quick, easy to prepare and very nutritious meal. Our chefs suggest this recipe with a little garlic and wine. But we are convinced that this express version of our Chicken and Broccoli Pennine will satisfy you plenty.
A scrumptious submarine to eat with an appetite
Submarines are delicious and can be made in a jiffy. Feel like trying one? No problem. To make a submarine like our Club Mikes, you'll first need a 7 to 10 inch long submarine bun. You'll also need strips of cooked chicken, golden bacon, chopped lettuce and tomatoes.
Preparation begins by slicing the bread lengthwise. Open it wide and place it on a baking sheet. Add the chicken and bacon. If you feel so inclined, add grated mozzarella and bake at 400°F until the cheese is melted. When you remove it from the oven, just add the lettuce and tomatoes before dressing with a little mayonnaise. Bon appétit!
